Chimichurri...
If I could travel anywhere someday I would choose Patagonia, hands down. A vacation of fly fishing, rock climbing, hiking, or all of the above would be ideal in my mind. At this point, however, a trip of that caliber seems like little more than a pipe dream. What I can do now, though, is cook with some Argentine flavor. I spent the morning chopping ingredients for our lunchtime meal...I love chopping. Lots of cilantro, garlic, onion, some other spices, extra virgin olive oil, red wine vinegar, and lime juice made up a chimichurri chicken marinade. More cilantro, parmesan cheese, lime juice, garlic, and olive oil added to a can of drained/rinsed chickpeas is a new
take on bean salad. Lastly as the chicken was grilling I heated up some frozen carrots, sauteed them in butter with garlic, and added some thyme powder. Snow on the ground, but we're grilling South American style...

YUMMMMMMMMMMMMM! Wouldn't it be great to have all the time in the world to cook? You WILL get to Patagonia some day!
